Seafood Paella Recipe


I can't get enough of seafood lately! This little dish is the perfect feel-good meal to use up anything left over in the fridge and fill you up.




Ingredients (to serve 2)

  • 1 white onion, chopped
  • 1 clove of garlic, crushed
  • 3 tbsp olive oil
  • 1 tin of chopped tomatoes
  • salt and pepper
  • 1/4 tbsp of paprika
  • a handful of frozen peas
  • as much seafood as you fancy! (we used 50g prawns and 200g mussels)
  • 300g paella rice
  • 500ml fish/chicken stock


What to do

  1. Pop the chopped onions, crushed garlic and olive oil in a wok over medium heat (ideally a paella pan but we don't have one), stir frequently until onions soften
  2. Add in the seasoning (most recipes also add saffron, but we don't have any - it's still delicious without!)
  3. Pour in the stock and the chopped tomatoes, then add the paella rice and leave simmer over medium head, stirring frequently.  Trust me, all of that liquid will disappear! After about 5 minutes, add the frozen peas.
  4. When there's a small amount of liquid still surrounding the rice, add in the seafood.  We usually use the opening of the mussels as a tell-tale sign that it's ready
  5. Spoon into shallow bowls and serve hot.
We love having this little meal, and you can basically add whatever meat you fancy - we also love it with chicken pieces added :)

  1. YUM. That is real paella. I've had paella in restaurants and it is dry and it's the worst. This looks so yummy!

  2. This sounds delish! I've been wanting to try more seafood so I might give this a go.
    I'm also in Portsmouth too btw! Do you go to the uni?
